Here’s a recipe for some delicious muffins! They are a little healthier because it uses whole grain flour and olive oil instead of loads of butter! I also used neufchatel cheese in place of the cream cheese! I combined a couple recipes to make this one, but the batter comes from Olive Oil Baking by Lisa A. Sheldon.
Pumpkin Cream Cheese Muffins
Ingredients
- Filling: 1 (8 ounce) package cream cheese (6oz is ok)1 egg1 teaspoon vanilla extract3 tablespoons brown sugar
- 1 tablespoon flour
- Topping: about 3 tablespoons all-purpose flour3 tablespoons white sugar3/4 teaspoon ground cinnamon2 1/2 tablespoons butter1 1/2 tablespoons chopped pecans
- Batter: 1 cup all purpose flour
- 1/2 cup whole wheat pastry flour
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp olive oil
- 1/2 cup low-fat buttermilk
- 1 cup canned pumpkin
- 1/4 cup applesauce
- 2 large eggs
Directions
- Filling: Beat all together until creamy but still with cream cheese lumps
- Topping: Mix dry ingredients then press butter in with fork until it forms lumps and crumbles
- Preheat: 350 – 375 (mine runs hot, so 350)coat pan
- Large bowl- combine flours,sugars, baking powder, baking soda, slat, cinnamon, pumpin spice and mix to combine.
- In another bowl- whisk olive oil, buttermilk, pumpkin, applesauce, and eggs to combine. Add it to dry mixture until just moist.
- Spoon batter, filling, batter. Then top with crumble.
- Bakes about 20 min.

Thursday, October 15th, 2009so, at the moment I’m drinking coffee a bit later than normal and a bit faster than I should. I’m waiting for the washing machine guy to finish inspecting whats left of our pretty ancient washer. I want to go downstairs and grab my sponge brush so I can stain this paper a different color…
I’m waiting on some frames I bought from ebay to start on the LA show. Trying to spend the least amount on framing as possible.
Matt’s bff’s from Kentucky are visiting through the weekend. So we’re probably going to be checking out lots of the microbreweries this weekend. They are beer connoisseurs/lovers. Its made me appreciate all the complex tastes…I just don’t see how you can drink much more than one…those suckers fill me up! So I’ll probably just taste and sip on everyone elses!
Ok, so i was interviewed for a part time job the other day. I really want it! Come on universe…send me some love!

Where the Wild Things Are

Wednesday, October 7th, 2009We were at a flea market in Brooklyn and I saw this little dragonfly chillin’ on some vintage dresses. I got my polaroid out to take it…of course the wind blew at the exact second my finger took the shot and the only thing that was blurry was the dragonfly! Luckily, Matt took this one! Although, the back popped open and the picture caught some light. (notice the white line) This dragonfly didn’t want us to steal his soul, I guess!
New York was so much fun. From the minute I stepped off the subway and onto the streets I felt so at home. It was so weird. I use to think New York was too busy for me, but I absolutely love it. So we’ll see. Grad school is the next big step…maybe in NY, maybe not. Whichever school will pay for my tuition is the main agenda.
It was really nice not needing a car at all. Walking and using the subway was so easy! I know if I moved away from Portland I would miss the proximity to the mountains and ocean though.
Fall,fall,fall…why do you mess with me so much. This time of year always feels like more of a transition than any other time. My sleep cycles gets all screwed up and I feel the need to find things that are familiar and carry them around in a sack. Maybe we should tie handkerchiefs to sticks, packed with a lunch and lay down in a park. If only the trees were like the ones in Nightmare Before Christmas. Except instead of secret passage ways to different holidays they would be passages for friends to come and meet up. We’d swap grub for stories and hang snapshots off the branches.
Ok, so I been a bit scared to go downstairs and get back into my paintings since I’ve been back. But yesterday and today the ideas have been slipping down my shoulders and hanging from my eyelashes.
Gotta get caught up. So many shows in the not so far future! I just got another one today that will be in February at Seven Virtues Coffeeshop! Such a cute space!
